I recently catered a wedding for 250 people. As guests left the ceremony for the reception they were offered three types of appetizers. Two of the appetizers, while simple were labor intensive. The third, a snap to make, was the first to disappear.
Caprese Picks: Mini mozzarella balls (or cubes) plus basil leaf, cherry tomatoes and a drizzle of balsamic. If you have toothpicks on hand, you are ready to roll. Bamboo picks kick up the presentation factor but aren’t necessary. It’s as simple as assembling two or three complimentary items on the picks. Here are a few of my favorite combos:
Game Day Picks: Salami slices (folded to look like a fan) plus any type of olive
Sausage and Meatball Picks: Cooked mini meatballs or chunks of cooked sausage, basil, bread cube or cheese plus marinara sauce for dipping.
